The Decision
We have just made an offer on a cafe in a seaside resort town in south Devon. My concept was to create an upmarket cafe bordering on bistro that would serve cakes and pastries inspired by American style of baking and a savoury menu inspired by Parisian cafes, bistros and brasseries.

I thought I would draw inspiration from all the things I loved in my childhood...memories of growing up with my grandmother, learning to cook from her, inheriting her passion for cuisine and her strict adherence to tradition and values. She taught me that as long as I put my heart and soul in everything I do, anything is possible...

And so the concept of Regent Street Cafe or 26 Regent Street was born...
